The sun is finally shining, and SIX Baltic has announced details of its new summer tasting menu with a twist. 


Leading the plant-based gastronomic revolution in the North East, SIX Baltic will be hosting a flavour-packed summer tasting menu that is sure to sweep you off your feet.  The exclusive dining experience, for one night only on 20th June 2023 has a plant based-theme, and guests can enjoy the culinary experience with stunning panoramic river views of the landscape across the Tyne.  

From field to fork, the menu fuses the versatility of plants with the best locally sourced ingredients to produce a healthy menu inspired from all around the world.

Well thought out and intriguing, the fine-dining summer tasting menu is produced by SIX Baltic’s Food Director Greg Lambert, and includes:

Welcome—Pure Knead Focaccia, Onion Confit in Balsamic Apple Vinegar

Snacks—Chickpea Chips, Patatas Bravas, Citrus & Fennel Olives

First course—Tomato Tartare, Avocado Cream, Corn

Second course—Celeriac Carbonara, Tofu Bacon, Walnut

Third course—Braised Hispi, Romesco, Potato Terrine, Parsley Liquor

Last course—Gin, Blood Orange & Tonic Slushy

Treats to take home—Jamaica Cake, Fruit Pastille, Snickers Fudge

Drinks pairing by local producers Bolney Wine Estate, Lanchester Wines, and Ad Gefrin can be added to the experience for an extra £25 per person. 

Food Director Greg Lambert says: “Following the success of our Spring plant-based evening, I wanted to continue to showcase the versatility plants can give us as chefs when being creative. 

“The idea behind our summer tasting evening menu is to showcase dishes inspired from all over the world that may usually be animal-based but adapted to plant-based without losing flavour. 

“I eat a lot of plant-based food and wanted to share that we can make top-quality food that is fulfilling and comforting, minus animal products such as butter, cream and eggs. I think this menu delivers that in spades. 

“From our summer tasting menu, diners can expect dishes that are fun, tasty and unpretentious, and hopefully will spark ideas for cooking plant-based dishes at home.”

SIX is a sleek, modern fine dining restaurant, located on Baltic’s rooftop, overlooking Newcastle and Gateshead’s expanse of skyline, with impressive sweeping views over the River Tyne. Its exquisite, modern British menu is artfully presented and reflects the team’s passion for seasonal, healthy, locally sourced produce.

In celebration of some of the best local producers in the region, Food Director Greg Lambert sources his selection of seasonal ingredients from Pure Knead, W.S Bentley, Annabel’s Deliciously British, Wharfe Valley, and Truffle Hunter.

The summer tasting menu by SIX Baltic will be held on 20th June and is charged at £50 per person. Drinks pairing is charged at an extra £25 per person. Bookings can be made direct through www.sixbaltic.com/tasting-evening
