This simple and nutritious seabass dish is the perfect fuss-free weeknight meal that can be whipped up in 20 minutes.

Seabass is a great source of protein and Omega-3 fatty acids. This meal is ideal if you’re following a low-carb diet, and can be served with green veg of your choice or a side of salad.

You can fry the seabass rather than oven-bake if you prefer.

Ingredients:

2 pieces of sea bass

For the fish paste:

2 shallots, sliced (1/3 cup)

2 garlic cloves

12 curry leaves

2 teaspoons chilli powder

1 tablespoon coriander

1 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon turmeric

1/2 teaspoon yellow curry powder (optional)

1 tablespoon veg oil

1 tablespoon lime juice

Garnish with fried curry leaves

Method:

  1. Preheat oven to 180 degrees (or warm a heavy-based non-stick frying pan)
  2. Pat the fish dry, remove any bones and place on a greased or parchment-lined sheet on a baking tray
  3. Place all the ingredients for the fish paste in a food processor and pulse until finely chopped. Scrape down the sides of the food processor, pulse again, and repeat until you have a thick paste (it doesn’t need to be smooth)
  4. Brush the fish paste on the tops and sides of the fish
  5. Bake in the oven until cooked through (12-18 minutes depending on thickness) or a few minutes on each side in a frying pan.
