Give Sachin’s spicy, flavourful and delicious Nilgiri Goshat a go
Newcastle’s favourite Punjabi restaurant, Sachins, is back with a bang this week as head chef Bob Arora shares a delicate and hearty Nilgiri Goshat.

As the weather gets colder, more of us are looking for warming dishes to indulge in during the darker weeknights.


Newcastle’s favourite Punjabi restaurant, Sachins, is back with a bang this week as head chef Bob Arora shares a delicate and hearty Nilgiri Goshat. Featuring tender pieces of lamb, fresh curry leaves, rich coconut cream and fragrant spices, this North Indian culinary gem is definitely worth a go next time you’re feeling uninspired in the kitchen.

Ingredients

(You will need a non-stick pan with a lid for this recipe)

  • 2 tbsp veg oil
  • 800g diced lamb ideally all the same size
  • 2 onions thinly sliced or chopped
  • 2 garlic cloves, thinly sliced
  • 1 tbsp freshly grated ginger
  • 1 long red chilli, deseeded and finely chopped
  • 1 tsp turmeric powder
  • 1 tsp chilli powder
  • 1 tsp Garam Masala
  • 10 fresh curry leaves
  • 400g can of chopped tomatoes
  • 1/2 cup (125ml) coconut cream
  • 2 tbsp chopped coriander
  • 1 tsp Fenugreek seeds
  • 1 tsp Mustard seeds
  • Salt to taste

Cooking instructions

1. Warm the oil in a pan

2. Once the oil is warm, add the curry leaves and allow them to crackle in the oil

3. Add the fenugreek and mustard seeds

4. When the seeds start popping add the onions. Cook and continue stirring until they go translucent

5. Now add the garlic and ginger and the red chilli to the pan and keep stirring

6. When the onions start to brown add the turmeric, chilli powder, Garam Masala and salt

7. Keep stirring all the ingredients together and now add your tin of chopped tomatoes, keep bashing the tomatoes until you have a nice thick Masala

8. Once you have a thick Masala add your lamb and keep stirring until all of the masala has covered the lamb

9. At this point add your coconut milk and put the lid on the pan and keep stirring until the lamb is cooked and tender

10. Finally, garnish with chopped coriander and serve with rice or naan bread
