Fresh, delicate and super-tasty, this simple chicken curry is a fiery winter warmer. Utilising all the traditional ingredients likely hidden away on your own spice rack, this is a budget-friendly recipe that does not compromise on flavour.

After Bob Arora cooked up a storm demonstrating the recipe at this year’s Living North Christmas Fair, you can now show off your own culinary skills by serving up this Sachins showstopper at your next festive party.


Ingredients:

1 tablespoon veg oil

2 medium onions (finely chopped)

½ tablespoon of garlic ginger paste

3 green chillies

2 chicken breasts

1 tin of tomatoes

½  teaspoon of fenugreek seeds

½ teaspoon of black mustard seeds

½ teaspoon of cumin seeds

½ teaspoon of coriander seeds

1 teaspoon of turmeric

¼ teaspoon of chilli powder

½ teaspoon of garam masala

1 tablespoon of tomato purée

A handful of fresh, chopped coriander

Salt to taste


Steps:

  1. Warm the oil in a pan
  2. Add fenugreek seeds, black mustard seeds, cumin seeds and coriander seeds
  3. Add the finely chopped onions
  4. When the onions start to caramelise, add half a tablespoon of garlic ginger paste
  5. Keep stirring to avoid the garlic ginger sticking to the pan
  6. Once the onions are golden, add the tin of chopped tomatoes
  7. Cut the chillies in half and add them with the seeds
  8. Add some salt and keep stirring
  9. Now add the Turmeric, chilli powder and garam masala and cook until the masala has thickened
  10. Add the tomato purée
  11. Keep stirring (you might need to add some water at this stage)
  12. Now cut your chicken into pieces and add to the masala
  13. Cook on a medium flame/heat and put a lid on your pan
  14. Cook until the chicken is cooked
  15. Add your chopped, fresh coriander and garnish
  16. Serve on a bed of rice or with a warm naan bread
